I love eggs in any and every way- hard boiled, scrambled, omelet. I wanted to try a different recipe than the usual. These egg and bacon quiches are easy to make and customizable depending on what you like in your eggs. They can be made with a crust (I used puff pastry dough) or crust-less.
Ingredients:
3 eggs
1 cup milk
1/4 of an onion, finely diced
1/4 a green pepper, finely diced
1 teaspoon red chili flakes
4 slices of turkey bacon, cut into thin strips
1/2 cup cheddar cheese (or any other cheese you like with eggs)
salt and pepper to taste
Puff pastry dough, thawed (optional if you want a crust)
What to do...
1. Preheat the oven to 400 degrees.
2. Grease a muffin pan using oil or cooking spray. If you want a crust, cut the puff pastry sheets into circles that fit into each muffin cup. Avoid using cupcake or muffin baking cups because they prevent the puff pastry shells from cooking completely (this was a mistake that I made as can be seen from the above picture).
3. In a bowl, whisk together all the ingredients until well blended.
4. Pour the mixture into each muffin cup. Fill each one just below the top.
5. Bake in the oven for 20 minutes, or until the tops are golden brown.
