These no-bake granola bars are super easy to make. They are also customizable, so you can add whatever fillings you like!
Ingredients:
2 cups quick oats
1 cup rice crispy cereal
1/4 cup honey
1/4 cup coconut oil (can use butter as well)
1/3 cup brown sugar
2 teaspoon vanilla extract
mini chocolate chips
What to do...
1. In a large bowl, mix together the oats and rice crispy cereal. Set aside.
2. In a small saucepan on medium heat, mix in the honey, coconut oil, and brown sugar. Stir until boiling and all the sugar has dissolved.
3. Remove from the stove and set on a cool surface. Mix in the vanilla extract.
4. Pour the honey/sugar/oil mixture in the bowl with the oats and rice crispy cereal. Mix very well, until all pieces are evenly coated. This may take a minute or two.
5. In an 8x8 greased glass baking dish, pour in mixture and press down very firmly to pack it all in. Make sure you pack it in as firmly as possible, otherwise the final result will not stick together.
6. Sprinkle with chocolate chips and press down firmly again.
7. Cool for about an hour before cutting into bars.
