This recipe for lentil soup is super healthy and easy to make.
Ingredients:
1 tbsp olive oil
1 large tomato, chopped
1 medium onion, chopped
2 small stalks of celery, chopped
1 tablespoon minced garlic
1/2 cup mixed vegetables (whatever you want- carrots, potatoes, corn, peas, etc.)
1 1/4 cup lentils (any type)
2 tsp cumin
1 tsp coriander
1/2 tsp chili peppers
1 tsp black pepper
1 tsp salt
1 cube vegetable/chicken bullion (optional)
lemon juice
What to do...
1. In a large pot, heat the olive oil on medium high heat. Once it is heated, add the onions, garlic, and celery.
2. Saute until onions are soft. Add the tomatoes, mixed vegetables, and lentils.
3. Mix. Add all the spices including bullion cube (optional).
4. Add in four cups of water.
5. Cover the pot, lower the heat to medium, and cook for 30 minutes or until lentils are very soft.
6. Puree your soup with a hand blender or a regular blender. Make sure all the vegetables and lentils are pureed well. There should not be any big chunks of anything (unless you like chunky soup).
7. Add water if the soup is too thick until you reach desired consistency.
8. Add in lemon juice and more salt if needed.
