Never in a million years would I have ever thought of making homemade pasta. While browsing through recipes online, I found a simple-looking recipe for homemade ravioli, so I though I'd give it a try. Wow! Even though it was very time consuming, it was worth it. The final result actually tasted like ravioli! I got the pasta dough recipe from here which also includes video.
Ingredients:
Pasta dough
2 3/4 cups of Flour
3 Eggs
1 Tbsp of Olive OIl
1 tsp Salt
1/3 cup of Water
Ravioli filling:
1 1/2 cups ricotta cheese
1/2 cup mozzarella cheese
1/2 pound cooked ground beef
1/2 cup Parmesan cheese
1 tbsp Italian seasoning
1 egg
1 teaspoon salt
pinch of pepper
any pasta sauce
What to do...
1. To make pasta dough: In a food processor, Kitchenaid mixer, or bowl with hand mixer, add the flour, salt, eggs and oil. Mix until coarse crumbs form.
2. With the motor running, add the water and mix just until the dough comes together (dough will be sticky)
3. Dump on a well floured surface and kneed it until it's no longer sticky. You can also do this in a Kitchenaid mixer.
4. Cover with plastic wrap and place it in the fridge for 30 minutes.
5. Meanwhile, mix all the ingredients for the ravioli filling in a separate bowl.
6. Take out the dough from the fridge. Cut the dough into 8 equal pieces. Roll out dough into very thin (1/16th of an inch) flat sheets. Cut into small squares.
7. Fill each square with a small teaspoon of the cheese mixture. Either fold the square into a half circle shape to close it OR place another square of the pasta dough on top and press down on the edges. Use water to make sure the dough sticks together.
8. Place in a boiling pot of water. When the ravioli pieces float to the top, they are ready.
9. Top with your favorite pasta sauce.
