Ingredients:
1 can of pure almond paste (8 oz.)
5 tablespoons egg white
1 teaspoon vanilla extract (make sure it does not contain alcohol) or imitation vanilla extract
1/3 cup sugar
Nutella
What to do…
1. In a bowl, using an electric mixer or KitchenAid mixer, mix together almond paste, sugar, vanilla extract, and egg white. Mix well until creamy and well blended, not runny, but not thick. Make sure there are no bubbles or chunks of almond paste. This might take up to 3-5 minutes.
2. On a baking pan, cover with parchment paper. Preheat oven to 375 degrees.
3. Using a piping or icing bag with a circular tip, fill the bag with almond paste mixture.
4. Pipe out small, circular cookie shaped macaroons. Keep some distance between each macaroon as the macaroons spread when they bake.
5. Bake macaroons for 7-10 minutes or until golden brown on top. Keep an eye on them as they burn quickly if kept a few minutes too long.
6. When done baking, keep out to cool. After cooled, spread Nutella on one side of a macaroon. Place another macaroon on top to create a macaroon sandwich.
