Ingredients:
2-3 salmon fillets
1 small onion, chopped
1 tablespoon minced garlic
1 tablespoon lemon juice
1 tablespoon cumin
1 tablespoon coriander
1 table spoon dill weed
½ cup tomato sauce
1 tablespoon Italian seasoning
1 tablespoon olive oil
1 teaspoon parsley
1 teaspoon salt (more or less to taste)
What to do…
1. Pre-heat oven to 375 degrees.
2. Marinate salmon in all of the above ingredients except parsley. Make sure to rub marinade into the salmon well. Marinate for 20 minutes- 1 hour.
3. Before putting in the oven, sprinkle to parsley on top of the salmon fillets.
4. Bake in the oven covered for 20 minutes or until salmon is flaky (check using a fork).
Side note: when eating the salmon, make sure to pour the tomato sauce mixture on top :)
