Tacos are easy and quick to make. Chicken tacos are healthier than beef tacos and, in my opinion, better tasting. You can make the ground chicken the same way you make ground beef, but I like to keep it simple to really bring out the flavor of the chicken. Enjoy :)
Ingredients
1 Ib ground chicken
1 tablespoon oil
1 tablespoon cumin
1 table spoon coriander
1 tablespoon salt
½ cup chopped onions
1 tablespoon minced garlic
salt and pepper to taste
1 cup water
2 tablespoons taco sauce
Any desired taco toppings: shredded cheddar cheese, sour cream, shredded lettuce, tomatoes, etc.
4-6 soft Tortillas
What to do…
1. Heat oil in pan. Sauté onions until translucent.
2. Add garlic. Sauté until yellow in color.
3. Add salt, cumin, and coriander. Mix together.
4. After about 1 minute, add the ground chicken. Mix 2-3 minutes until chicken is no longer pink. While mixing, use the edge of the spatula to cut up chicken into small chunks.
5. After 5 minutes, add water. Lower heat to medium. Cover and let cook for about 15-20 minutes or until all water has evaporated.
6. Once water has evaporated, add 2 tablespoon of taco sauce. Mix it in until well blended. Cook until all moisture is gone.
7. Make your tacos using any desired toppings.
