One of my favorites!
Ingredients:
1 Cornish hen (feeds 2 people)
¼ cup butter
salt and pepper to taste
Marinade:
1 small onion chopped
1 tablespoon minced garlic
1 tablespoon coriander
1 tablespoon cumin
1 tablespoon salt
1 teaspoon lemon juice OR ¼ piece of a lemon
What to do…
Before marinating, poke holes all over the cornish hen to allow flavor to seep into the middle.
1. Marinate the Cornish hen in above mixture for 1-24 hours (the longer the better). Stuff some of the marinade inside the Cornish hen. Rub the remaining marinade on the outside.
2. Pre-heat oven to 425.
3. Once marinated, place the Cornish hen in a roasting pan. Cover with foil. Cook in the oven for 1 hour.
4. Melt butter. Add salt and pepper to the melted butter.
5. After an hour, baste Cornish hen with juices from the pan and butter mixture. Cook in the oven uncovered for 15-20 minutes or until lightly browned.
6. Broil for 30 seconds to get crispy skin on the outside of the hen.
