I'm not a big fan of mushrooms, but I love cream of mushroom soup. This is a light and simple dish. It's best eaten with rice or plain pasta.
Ingredients:
6-8 pieces of medium-sized chicken breasts
1 can cream of mushroom soup
1/4 cup milk
1 tablespoon minced garlic
1 teaspoon cumin
1 teaspoon cayenne powder
1 teaspoon summac
1/3 cup shredded mozzarella cheese
1/3 cup panko or Italian bread crumbs
salt and pepper to taste
What to do...
1. In a large bowl, mix the cream of mushroom soup and the milk until well blended.
2. Add the minced garlic, cumin, cayenne powder, and summac, salt and pepper. Mix well.
3. In a baking dish, pour half the cream of mushroom mixture on the bottom.
4. Place the chicken breasts in the baking dish.
5. Pour the remaining cream of mushroom mixture on top of the chicken breasts.
6. Cook in the oven at 375 degrees uncovered for about 20-25 minutes, or until the cream of mushroom mixture begins bubbling.
7. Once the mixture begins to bubble, take out of the oven and spread the mozzarella cheese evenly on top. Sprinkle the bread crumbs on top of the cheese.
8. Return to the oven and broil for about 1-2 minutes or until top is a golden brown and the cheese has completely melted.
