Ingredients:
Crepes:
1 cup all-purpose flour
2 eggs
1/2 cup milk
1/2 cup water
1/4 teaspoon salt
2 tablespoons butter, melted
2 eggs
2 tablespoons salsa (highly recommended: Pace Picante HOT salsa)
1 tablespoon shredded cheddar cheese
salt and pepper to taste
What to do:
1. In a mixing bowl, mix together all crepe ingredients until well blended and smooth. Make sure there are no lumps.
2. Heat a frying pan. Brush oil on the bottom of the frying pan. Pour about ¼ cup of the batter in the pan. Move the pan in a cicuar motion to evenly spread out the crepe batter.
3. After 1-2 minutes, when the edges start moving upwards, flip the crepe to cook the other side.
4. After 1 minute, when crepe is done cooking, place crepe on a separate plate.
5. In the same frying pan, brush with oil.
6. Scramble the eggs until well cooked.
7. Add the salsa and cheese.
8. Mix on high heat until most of the water from the salsa has evaporated.
9. Once ready, spread on the crepe.
