A really good side dish with pasta or fries. It can also be used to make awesome chicken Parmesan sandwich
Ingredients:
1 lb thinly sliced chicken breast
1 egg
Salt and pepper
Ingredients for breadcrumb mixture
½ cup Italian breadcrumbs
¼ cup flour
½ cup grated Parmesan cheese
1-tablespoon celery salt
¼ cup panko breadcrumbs
1. Mix all breadcrumb mixture ingredients together.
2. In another bowl beat the egg and add some salt and pepper.
3. Dip each slice of chicken breast first into the egg mixture, then into the breadcrumb mixture. Make sure each chicken slice is fully coated on both sides. Set aside breaded chicken in another plate.
4. Cook in the oven (400 degrees) for about 20-30 minutes until golden brown OR fry each chicken slice in canola oil until golden brown on both sides.
